Bees'
renowned fidelity to a single type of flower results in the production
of single-flower varieties of honey.
The
thyme grows in dry soils and in southward-facing coastal strips.
Honey from this flower source is dark-amber colored, has a deep
and pleasant scent and an intensely aromatic flavor. It helps relieve
constipation, indigestion, bronchitis, asthenia and loss of appetite.
Period of production July.
The
carob honey is produced in a specific area of the Iblean Mountains
where is a large quantity of carob woods. It is an autumn honey,
dark-amber colored and easily crystallizing. It has a distinctive
carob fragrance and is a favorite ingredient for traditional confectionery.
Period of production November-December
The
orange blossom honey has a light-amber color, a distinctive scent
of orange-blossom and a smooth and pleasant taste. It has calming
effects and helps relieve insomnia.
Period of production May.
The
eucalyptus honey is walnut colored and strongly flavored, with intense
and pleasant aroma.
It is a good antiseptic, emollient and expectorant.
Period of production July-August
The
chestnut honey is produced in the mountainside in June and July.
It is dark colored with a deep and acrid smell, and a slighly bitter
taste. It improves blood circulation and is recommended for people
who suffers from anaemia and asthenia, for people who practise sports
or after an intense physical performance. It is also a good liver
and prostate decongestant.
Differently
from other types of honey this is made from the nectar of many different
mediterrenean flowers hence characterized by a variety of flavors
and scents.
Period of production late spring.
Produced
in the Plain of Catania, this type of honey is made from the sulla
flower (a plant that is mainly cultivated for fodder). It is a good
laxative and diuretic, has excellent cosmetic properties and is
used to treat acne.
